Essential Ingredients for Your Savory Pizza Strata
Crafting this incredible pizza breakfast casserole begins with a selection of fresh, high-quality ingredients. Each component plays a crucial role in building the layers of flavor that make this dish so popular. Here’s what you’ll need:
- Boboli Pizza Crust (or White Bread Slices): This forms the foundational layer. A 14-ounce Boboli crust works perfectly, but for a classic strata feel, 6 slices of sturdy white bread cut into 1-inch pieces are an excellent alternative.
- Butter: Essential for sautéing the aromatics and adding a rich, savory base.
- Yellow Onions: Two cups of chopped yellow onions (approximately 1 large onion) provide a sweet and aromatic depth to the sausage mixture.
- Ground Pepper & Italian Seasoning: These spices infuse the casserole with classic Italian-pizza flavors and a subtle kick.
- Sea Salt (or Kosher Salt): To enhance all the delicious flavors and balance the richness.
- Mild or Hot Bulk Pork Sausage: Two pounds of ground sausage, without casings, is the savory protein heart of this dish. Choose mild for a family-friendly option or hot for an extra zing.
- Fresh Mushrooms and/or Bell Peppers (Optional): For added texture, flavor, and nutrition, consider 8 ounces of sliced fresh mushrooms or diced bell peppers. Feel free to customize to your liking!
- Mixed Shredded Cheeses: Two cups of a delicious cheese blend are crucial for that signature melted pizza experience.
- Mini Pepperoni: Five ounces of mini pepperoni are scattered throughout, delivering those iconic savory, slightly spicy notes that define pizza.
- Pizza Sauce: One cup of your favorite pizza sauce (like Trader Joe’s) adds that quintessential tomato base and tangy flavor.
- Large Eggs (or EggBeaters): Eight large eggs, or 2 cups of EggBeaters, bind the casserole together, creating a fluffy, tender texture.
- Milk: One cup of milk combines with the eggs to form the custardy base of the strata.
Cheese Selection Tip: Don’t limit yourself to just one type of cheese! A mixture of grated cheeses elevates the flavor and texture significantly. Experiment with white cheddar, mozzarella for stretchiness, sharp asiago, salty parmesan, creamy provolone, or buttery fontina to create your perfect blend.

Step-by-Step Instructions: Assembling Your Pizza Breakfast Casserole
Creating this magnificent pizza breakfast casserole is a straightforward process, especially with our clear, easy-to-follow steps. Get ready to assemble a dish that’s bursting with flavor!
1. Prepare Your Baking Dish & Oven: Begin by lightly spraying or greasing a large 9×13-inch casserole dish with nonstick spray. This ensures your casserole won’t stick and makes for easy serving. Preheat your oven to 375°F (190°C).
2. Prepare the Bread Base: Cut your 14-ounce Boboli pizza crust (or 6 slices of white bread) into approximately 1-inch pieces. These pieces will form the delicious, absorbent layers of your strata.

3. Sauté Aromatics and Cook Sausage: In a large skillet or heavy-bottomed pan, heat 3 tablespoons of butter over medium-high heat. Add your 2 cups of chopped yellow onions, sea salt, ground pepper, and Italian seasoning. Cook for 4-5 minutes, stirring occasionally, until the onions are softened and just beginning to brown. Adding the seasonings at this stage allows their flavors to beautifully infuse into the onions and butter, building a robust flavor base.
Next, add the 2 pounds of bulk sausage (ensuring it’s not in casings) to the pan. Use a wooden spoon to break up and crumble the sausage into smaller, even pieces as it cooks. Once the sausage is thoroughly browned and cooked through, if you’re adding mushrooms, stir them in and cook for an additional 3-4 minutes until they soften. Turn off the heat and set the mixture aside.

4. Create the Bottom Layer: Distribute one-third of your pizza crust (or bread) pieces evenly across the bottom of the prepared casserole dish. Follow this with one-third of the cooked sausage/onion/mushroom mixture, then one-third of the mini pepperoni, and finally, one-third of your mixed grated cheese.
5. Build the Middle Layer: Repeat the layering process. Add another one-third of the pizza crust (or bread) pieces, followed by one-third of the sausage/onion/mushroom mixture, another one-third of the pepperoni, and one-third of the mixed grated cheese.
6. Form the Top Layer: Complete your casserole layers by adding the remaining one-third of the pizza crust (or bread) pieces. Then, spoon over the rest of the sausage/onion/mushroom mixture, ensuring any delicious drippings are also included. Finally, sprinkle the remaining one-third of the mixed grated cheese generously over the top.
7. Prepare and Pour the Egg Mixture: In a large mixing bowl, crack your 8 large eggs and add the milk. Use a wire whisk to combine them thoroughly until the eggs and milk are well integrated and slightly frothy. Carefully pour this egg and milk mixture evenly over the entire casserole, ensuring it seeps down through all the layers.

8. Add Pizza Sauce and Final Toppings: Spoon 8-10 dollops of your favorite pizza sauce (Trader Joe’s is a great choice for quality and flavor) strategically over the top of the casserole. This adds pockets of tangy tomato goodness. Then, sprinkle the remaining mini pepperoni and any leftover shredded cheese over the entire surface for a beautiful, golden finish.

9. Bake to Golden Perfection: Place the casserole in your preheated 375°F (190°C) oven and bake for approximately 45 minutes, or until it’s beautifully golden brown on top, bubbly around the edges, and set in the center. The strata should puff up slightly as it bakes. Once done, remove it from the oven and let it rest for about 5 minutes before slicing and serving. This resting period allows the casserole to set further, making for cleaner slices.
Storing Leftovers: Any leftover breakfast strata can be stored in an airtight container in the refrigerator for up to 3-4 days. To reheat, simply microwave individual slices for about 2-3 minutes, or warm in the oven until heated through.

Strata Make-Ahead Breakfast Casserole: Frequently Asked Questions
Make-Ahead Tips: For ultimate convenience, assemble your entire casserole the night before. Cover it tightly with clear plastic wrap or aluminum foil and refrigerate. The next morning, remove the wrap and let it sit at room temperature for about 20 minutes before baking according to instructions. This slight warming helps it bake more evenly and ensures a perfect strata for your party!

What else is a breakfast casserole called?
A breakfast casserole like this is often referred to as a “Strata.” Originating from American cuisine, stratas are bread-layered casseroles that typically feature eggs, milk, and various cheeses, creating a delightful puffed-up texture when baked. They are commonly served for brunch or as a celebratory meal on holiday mornings. Beyond the basic egg and cheese, stratas can be customized with a variety of additions such as savory breakfast sausage, ham, or fresh vegetables like mushrooms or bell peppers. Some people also affectionately call these dishes a “savory bread pudding” due to their bread base soaked in an eggy custard.

Exciting Variations for Your Pizza Breakfast Strata
Just like ordering your favorite custom pizza, this breakfast strata is incredibly versatile! Feel free to experiment with different meats, vegetables, and cheeses to create a personalized casserole that perfectly suits your taste buds. Here are some fantastic ideas to inspire your culinary creativity:
- Add More Meats: Elevate the savory profile by tossing in some diced smoked ham, savory Canadian bacon, crispy crumbled bacon bits, or even cooked and shredded chicken!
- Experiment with Poultry: For a lighter option, consider adding sliced or diced roast turkey breast. It adds a delicious lean protein that complements the other flavors beautifully.
- Boost the Veggies: Just like on a classic pizza, fresh vegetables can make a huge difference. Incorporate some fresh sliced tomatoes, vibrant sun-dried tomatoes for a concentrated flavor burst, roasted crushed garlic cloves for aromatic depth, or even diced bell peppers in various colors for visual appeal and a touch of sweetness.
- Bread Alternatives: If Boboli crust isn’t available or you prefer a different texture, you can easily swap it for bread cubes made from a loaf of sturdy bread like Italian bread, French bread, or even brioche for a richer flavor.
PRO TIP: You might not believe it, but I’ve successfully used leftover pizza slices from the night before in this breakfast casserole, and it’s absolutely delicious! Simply cut the pizza slices into small 1-inch pieces and layer them in with the other ingredients. It’s an incredible way to reinvent leftovers and add an extra layer of authentic pizza flavor!
