Instructions

  1. Steam boil 6 eggs, or cook by your preferred method. Peel and chop them finely, and place them into a large bowl.
  2. Add the sea salt, black pepper, mayonnaise, Dijon mustard, lemon juice (adds brightness—try it!), finely minced fresh dill, and finely diced celery.
  3. Gently fold the chopped eggs in with the remaining ingredients in a mixing bowl using a spatula. Chill before serving for at least an hour; overnight is even better for flavor development!
  4. Spread generously on white, rye, or pumpernickel bread and add some more minced fresh dill and pickled red onions as desired.
